Our grappa is produced in a water bath distillery exclusively from the pomace of our own Viognier grapes. The highly concentrated alcohol is diluted with pure water from the Venetian pre-Alps until it has reached the desired strength, via the process of drop wise re-dilution which takes various weeks. The essential prerequisite, of course, is our soft and juicy pomace deriving from gently pressed grape skins.
The process take place in the historic cellars of Villa Dolfin in Rosà, near the village Bassano del Grappa, under the severe surveillance of the indisputable number one among Italy’s distillers, Vittorio Capovilla.
As far as we know, we are the only ones who produce a single varietal grappa from Viognier grapes.
It is particularly mild and aromatic appealing also to ladies’ taste. Apart from that we offer a Cabernet grappa which also exists in a barrel aged version.
